The Medical Side of the GF/CF diet. What we are treating and why it is not just Autism.

The gluten-free/casein-free diet has been a mainstay of biomedical treatments for autism since its beginnings in 1995. But why? Why do children on the spectrum improve when these peptides are removed? Why is the literature comparing the diet and autism so mixed? Why is it so controversial. We will be discussing the theories behind the diet and autism, the research comparing diet and autism and the current research that is showing specific body processes affected by gluten and casein.
